Making My Own Larabars

I went through a brief Larabar kick not too long ago. I appreciated their dairy-free options and simple ingredient list. If you think I’m kidding, just look at the ingredients for the Peanut Butter Larabar: peanuts, dates, sea salt. Yes, that’s it.

Now, peanuts are currently off the table, but when my co-worker asked if my elimination diet meant no more raw two-layer brownies, I realized I could make raw one-layer brownies and cut them up like a larabar. Since the bottom layer only uses dates, walnuts, hemp seeds, cocoa powder, vanilla and sea salt, I could eat it.

I made the bottom layer, chilled it, and cut it into bar-sized pieces. It worked well, except they do crumble more easily without a top layer. So, it’s a little messier than I would have liked, but it makes for an incredible snack between meals, crumbs and all.
